Stuffed peppers – The Mayeu's House

Chicken, stuffed peppers, corn and pasta

Sooo much yummy goodness. The chicken was simply seasoned with Season All. The pasta and corn were plain, with light butter. What really made the meal were the stuffed peppers.

The Republic Cafe (Manchester, NH)

The Republic Cafe's Egg Soufle with Pesto and Pomodoro plus a side of dressed greens.

What a delightful surprise this was. The soufle was light and rich, but not over the top. The pesto was flavorful and perfectly matched with the tomatoes and cheese. The field greens were splashed with just enough dressing to give some flavor without diminishing the freshness of the vegetables. Couple it with a coffee or double shot of espresso and you have yourself a great little brunch.

Dogs and Fries – The Mayeu's House

Hot dogs, French fries, peas and lime-basil seltzer cause dinner was short on time tonight.

Sometimes hot dogs, in this case the infamous Zweigles Pop-Open's of Rochester, NY, and french fries just hit the spot. Coupled with a simple Lime and Basil seltzer it'd make for a perfectly quick barbecue with the kids or neighbors.

Grilled Salmon and Zucchini – The Mayeu's House

Grilled Salmon With Dill and Lemon Zest Seasoning Alongside Grilled Zucchini

What an amazing dinner. Simple to make and deliciously healthy. A simple heavy dose of dill and lemon zest on the top of the salmon. The zucchini was coated in coconut oil to add a bit of nuttiness to the squash. Both were grilled over high heat for about 10-15 minutes, rotating when necessary.

Republic Cafe (Manchester, NH)

Lamb sausage omelette, home fries and espresso at the Republic Cafe

The lamb in this omelette had just the right spice and went very well with the roasted red peppers. The egg was light and fluffy and formed the perfect casing for the filling. The potatoes, a wee bit over salted, were a good mix with the omelette while the peppers and onions added to the overall appeal. I could've eaten 2 or 3 of these given the taste of that ground lamb concoction.
